Herby cream cheese and veggie tarts 🫶🏻

Celebrating the end of August with some summery little tarts that make a perfect grab and go snack. Store bought puff pastry makes these super simple, and you can use whatever herbs and veggies you have on hand. Ingredients below, and swipe ⏩ for the recipe method. Happy Monday, my dear friends 🩷

Makes 12 tarts

Ingredients:
-2 sheets of puff pastry
-1 egg beaten with water

For the filling:
-8oz block of cream cheese, at room temp
-about 1/3c crumbled feta
-about 1/3c finely grated Parmesan
-about 1/2c finely chopped herbs (I used dill, chives, and parsley)
-thinly sliced tomatoes and zucchini
-salt and pepper to taste

Thaw the puff pastry according to package instructions. Lightly roll out on a lightly floured surface, and cut into 6 even pieces. Score a square in each, leaving about a 1/4-1/2” border (see photo for visual). Preheat the oven to 400 degrees F.

In a bowl, thoroughly combine all of the cream cheese filling ingredients and season lightly with salt and pepper to taste. Using an offset spatula or spoon, add about 1-2tbsp to each pastry square, leaving the border we scored clear.

Meanwhile, thinly slice your tomatoes and zucchini. Thoroughly pat them dry on both sides to remove excess moisture.

Arrange the veggie slices on top of the cream cheese, and sprinkle with salt and pepper to taste. Egg wash the pastry border, and place the tarts on a baking sheet lined with parchment. Repeat with the other sheet of pastry.

Bake for 15-20 minutes at 400, or until the pastry is puffed up and golden. Garnish with fresh herbs, and enjoy at room temperature or warmed. Store in the fridge, wrapped well, for up to 5 days. Enjoy!

Chicken salad with tarragon and grapes 🫶🏻

One of my most popular recipes, and for good reason 🙂‍↕️ This chicken salad is light, and full of sweet and salty flavor, with a brightness from the tarragon. It’s delicious as a sandwich, on a bed of lettuce, or just straight out of the bowl. Recipe is on the blog archives!
