
I love a good sandwich, particularly ones that are easy to put together, but are big on flavor. This chicken salad with grapes and tarragon makes a fantastic sandwich filling (or can just be enjoyed on its own). It uses a mix of Greek yogurt and Mayo to make it a bit lighter and healthier, and the grapes and tarragon give an added complexity and layers of flavor. It’s a great way to use up left over roast chicken, and goes fabulously with homemade sandwich bread. But, it also works wonderfully with store bought bread and a rotisserie chicken. Regardless of how you choose to prepare it, this recipe is so flavorful and simple to make. It’s truly one of my all time favorites.
Ingredients for the perfect chicken salad
As someone who cooks and bakes for a living, I often like to make all of my recipe components from scratch. This chicken salad with grapes and tarragon makes fabulous use of leftovers from my Roast Chicken with Lavender and Honey, and goes perfectly with my Easy Whole Wheat Sandwich Bread. That said, there are some days when I just want something that will come together quickly, and this recipe is great for subbing in prepared ingredients from the store. Use any leftover chicken or a store bought rotisserie chicken, and your favorite sandwich bread. While it’s always fun to make something completely from scratch, not everything needs to be painstaking to prepare 🙂

The grapes and tarragon really add extra complexity and layers of flavor to this chicken salad, that just get better as it sits in the fridge. While this recipe calls for fresh tarragon, you can absolutely sub for dried if you’re not able to find any where you live.
I recommend using red grapes, as I think the flavor works best with the other ingredients. That said, you can use any type of grapes you prefer, just as long as they are seedless.
A classic made a lil’ lighter
As much as I love a classic chicken salad, sometimes the mayo can feel a bit heavy. In this recipe, I’ve subbed out 2/3 of the mayo for plain yogurt (greek or regular. Even non/low fat works well here) to make it a bit lighter and healthier. I like to still use a small amount of mayo for the added flavor and texture.

Making this chicken salad with grapes and tarragon
Making this recipe is incredibly easy. Simply dice up 2 chicken breasts, and chop your grapes. Chop up some green onions, two ribs of celery, some pecans, and a couple tablespoons of fresh tarragon, and combine all the ingredients with the yogurt, mayo, and salt and pepper to taste. Done!

How to store this chicken salad
This chicken salad stores very well in an airtight container in the fridge for up to a week. Enjoy it on its own as a cold salad, or as sandwich or wrap filling.
