Springtime sips mighttt just be my all time favorite, especially ones like the Empress Gin Rubarb & Rose! Made with homemade rhubarb and rose syrup, muddled strawberries, and featuring Empress 1908’s Elderflower Rose Gin, this cocktail is full of delicate floral notes, and classic spring flavors.

All about Empress Elderflower Rose Gin
Empress Gin is known for their Indigo Gin, which gets its beautiful purple color from butterfly pea flowers. This elderflower rose flavor of Empress has a surprisingly understated floral palate, with exquisite citrus and spice notes and a hint of sweetness that pairs beautifully with spring flavors! The stunning pink hue is, of course, all natural, derived from a unique combination of red rose petals and black carrots. It’s the perfect spirit for spring and summer cocktails.
How to make this cocktail
Making this cocktail is very easy. Set aside some extra time to make the rhubarb and rose simple syrup beforehand. To make the cocktail, simply muddle the strawberries in a collins glass, then add ice. Pour in the empress gin and syrup, stir to mix, and top with soda water. Garnish with pesticide-free rose petals and rhubarb curls!

What to pair with this recipe
This cocktail recipe uses a homemade rhubarb and rose simple syrup, which is also a key ingredient in my Strawberry Financiers with Rhubarb and Rose Buttercream recipe. Whip up a batch of the financiers, and then use the extra syrup for these cocktails to serve at your next garden party!
